Stem & Glory, pioneers of the burgeoning plant-based movement, to open new site at CB1
We speak to Louise, founder of ‘Stem & Glory’, the 100% vegan business - voted Design My Night’s best vegan restaurant in London (2019) and British Restaurant Awards best restaurant in Cambridge (2018) - about the story of the business, as it makes the move to CB1.
Tell us about how the restaurant started.
Louise: Stem & Glory grew organically over several years. I owned a vegan café previously within another business and then the opportunity to open a full-blown vegan restaurant in Cambridge presented itself. It was a complete hit, and everyone loved it, and we followed up with a second flagship site in in London in 2019.
What brings you to CB1?
We’ve been looking for a new, larger site in Cambridge for a long time.
I wanted to replicate the London flagship site in Cambridge – and every time you open a new place you get better at it.
I’ve kept an eye on the CB1 development for a few years and I saw a similar vibe to what we saw in London; a busyness at all hours of the day. It’s the most exciting part of Cambridge at the moment.
We’ve had a really positive response to the announcement. We’ve got core customers and people who will travel, as well as proximity to the station and all the exciting businesses and offices around, so we will aim to service all of those things.
How has Stem & Glory responded to the challenges of the past 12 months?
Every cloud has a silver lining and we have had more time to analyse everything, develop new dishes and new concepts, as well as look at cost control and create a leaner business model. We also launched a UK- wide store and it has gone really well, so we’ve now got a functioning commerce store to add to our core business.
What comes next as we re-open from lockdown?
I am an optimistic person and see challenges like these as just ‘problems seeking solutions.’
I’ve always liked to find what works and stick with it. For the CB1 site, we have considered the layout more, fine-tuning a more flexible business model in anticipation of any future challenges that arise. As the past year has proven, you never know what is around the corner.
The new site is also geared for a greater takeaway offering, and we have created a new vegan pizza range which is very delivery friendly too. We have adapted by creating a large outdoor terrace – with covering – which has space for 40 seats, so it’s really exciting.
What do you love about Cambridge?
I’ve lived in Cambridge for 35 years, spending my whole adult life here. I arrived one day and basically never left.
Cambridge is an oasis in the desert; I love the parks and the flower beds. It is such a lovely place with a great allure to it.
When will you be re-opening?
We will be holding a private launch on 3rd June, and I can exclusively reveal that will then open to the public on 4th June. See you then!
